This raw Linden honey is from the Eastside of the Tualatin Valley where the countryside starts. It is made from the linden tree flowers gathered by the bees in June. These hives were placed near to the linden trees when they were in bloom. This honey is smooth and spicy. Some people taste peppermint candy canes or cinnamon candies. Linden honey has a slight menthol scent.
Raw honey can crystallize as the glucose comes out of solution. One solution is to place the honey jar in a bowl of warm water. This will allow the honey to gently warm up to beehive temperatures. Depending on the type of honey, this might make the honey smoother.
